A Most Delicious Coffee Cake

Here's an easy step by step for a great coffee cake.  Ingredients; 150g butter, 150g caster sugar, 2 tsp instant coffee, 3 eggs, 150g self raising flour.
First grease and line two sandwich tins.  Then beat the eggs together with the instant coffee.
Then cream the butter and sugar together until light and fluffy.
Then add the eggs a little at a time and beat until combined.
Then fold in the flour, a few spoonfuls at a time using a metal spoon.
Then divide the mixture equally between the two tins and smooth out.  Then bake at 180 for 20-25 minutes.
Remove from the oven and allow to cool.
To make the filling and topping.  Ingredients; 1 tsp instant coffee mixed with 1 tbsp boiling water, 75g butter, 150g icing sugar.  Beat the ingredients together until light and fluffy.  Use half the mixture to sandwich the two cakes together and spread the remaining half on the top.  Grate some chocolate over the top of the cake if you wish.
Baking is a great way to socialise and spend time with your child.  We often talk about and compare the ingredients.  Think about different quantities and amounts (more or less).  Measuring out the ingredients and talking as we go.  Children will enjoy eating the finished product too!  There are many opportunities to develop your child's problem solving and numeracy skills as well as giving them the chance to develop independence and self esteem.
